de<strong> farine<\/strong><\/li><li>100g de <strong>beurre<\/strong><\/li><li>1 pinc\u00e9e de <strong>sel<\/strong><\/li><li>4 <strong>oeufs <\/strong>(si besoin en ajouter un 5\u00e9me)<\/li><\/ul><p><em>Craquelin<\/em><\/p><ul class=\"wp-block-list\"><li>50g de <strong>cassonade<\/strong><\/li><li>50g de <strong>beurre pommade<\/strong><\/li><li>50g de <strong>farine<\/strong><\/li><\/ul><p><em>Cr\u00e8me diplomate<\/em><\/p><ul class=\"wp-block-list\"><li>2 <strong>feuilles de g\u00e9latine<\/strong><\/li><li>40g de <strong>jaune d&#8217;oeuf<\/strong><\/li><li>75g de <strong>sucre<\/strong><\/li><li>25g de <strong>ma\u00efzena<\/strong><\/li><li>1 <strong>gousse de vanille<\/strong><\/li><li>250 ml de <strong>lait entier<\/strong><\/li><li>200 ml de <strong>cr\u00e8me liquide<\/strong><\/li><\/ul><p><em>D\u00e9coration<\/em><\/p><ul class=\"wp-block-list\"><li><strong>p\u00e2te d&#8217;amande<\/strong> (je fais \/><\/figure><p><strong>Commencer par le craquelin.<\/strong><br>M\u00e9langer le beurre pommade et le sucre au batteur \u00e9lectrique.<br>Ajouter la farine et m\u00e9langer jusqu&#8217;\u00e0 obtenir un m\u00e9lange homog\u00e8ne.<br>Abaisser sur 2 \u00e0 3 mm et conserver au frais.<\/p><p><strong>Pr\u00e9parer la cr\u00e8me diplomate.<\/strong><br>Elle se fait en 2 temps.<br>Mettre la g\u00e9latine \u00e0 ramollir dans de l&#8217;eau froide.<br>Fouetter les jaunes d&#8217;oeufs avec le sucre.<br>Ajouter la ma\u00efzena et fouetter.<br>Faire bouillir le lait avec la gousse de vanille fendue en deux (gratter les graines et ajouter les).<br>Verser une partie du lait chaud dans le m\u00e9lange oeufs,sucre et ma\u00efzena, bien m\u00e9langer, une fois le m\u00e9lange bien homog\u00e8ne, ajouter le reste du lait, m\u00e9langer de nouveau.<br>Reverser dans la casserole et cuire jusqu&#8217;\u00e0 \u00e9bullition.<br>Ajouter la g\u00e9latine et bien m\u00e9langer.<br>Verser dans un plat et filmer au contact.<br>R\u00e9server au frigo 3h.<\/p><p><em>Pr\u00e9chauffer le four \u00e0 200\u00b0.<\/em><\/p><p><strong>Passer \u00e0 la p\u00e2te \u00e0 choux.<br><\/strong>Dans une casserole, verser l&#8217;eau, le beurre et le sel.<br>Porter \u00e0 \u00e9bullition, une fois le beurre fondu retirer du feu et verser la farine en une fois.<br>Bien m\u00e9langer.<br>D\u00e9ss\u00e9cher la p\u00e2te (elle doit se d\u00e9coller facilement de votre casserole).<br>Mettre la p\u00e2te dans un saladier et laisser refroidir quelques minutes, incorporer les oeufs un par un.<br>Vous devriez obtenir une p\u00e2te lisse et homog\u00e8ne.<\/p><p>Mettre votre p\u00e2te \u00e0 choux dans une poche \u00e0 douille.<br>Dresser vos choux sur une plaque allant au four, recouverte au pr\u00e9alable d&#8217;une feuille de papier cuisson.<br>D\u00e9couper des disques dans le craquelin, les disposer sur chaque choux.<br>Pour la d\u00e9coupe j&#8217;ai utilis\u00e9 un verre \u00e0 shooter Ah Ah Ah<\/p><p>Enfourner pour 20 minutes.<\/p><p>Laisser refroidir.<\/p><p>Pendant ce temps <strong>finir la cr\u00e8me diplomate<\/strong>.<br>Fouetter la cr\u00e8me p\u00e2tissi\u00e8re pour la rendre un peu plus souple.<br>Monter la cr\u00e8me liquide en chantilly (mettez la cr\u00e8me et vos ustensiles au frigo se sera plus facile) et incorporer la d\u00e9licatement \u00e0 la cr\u00e8me patissi\u00e8re.<br>Mettre dans une poche \u00e0 douille et passer au montage.<\/p><p>Percer le dessous du choux ou ouvrir le choux et garnir joliment, les 2 versions sont sympa, m\u00eame si la seconde est plus simple comme vous pouvez le constater c&#8217;est celle ci que j&#8217;ai choisi.<br>Garnir de cr\u00e8me diplomate.<br><br><strong>Passer \u00e0 la d\u00e9coration.<\/strong><br>D\u00e9couper des petits masques en p\u00e2te d&#8217;amande et les disposer sur les choux.<\/p><p>D\u00e9guster! <\/p><p>Bon app\u00e9tit! <\/p><pre
