{"id":3032,"date":"2019-01-15T10:52:57","date_gmt":"2019-01-15T09:52:57","guid":{"rendered":"https:\/\/latambouilledebouille.com\/?p=3032"},"modified":"2019-01-15T10:57:02","modified_gmt":"2019-01-15T09:57:02","slug":"buche-vanille-et-caramel","status":"publish","type":"post","link":"https:\/\/latambouilledebouille.com\/index.php\/2019\/01\/15\/buche-vanille-et-caramel\/","title":{"rendered":"B\u00fbche vanille et caramel"},"content":{"rendered":"<p>Bonjour bonjour!<\/p><p>Je vais enfin vous proposer la recette de ma <strong>b\u00fbche vanille et caramel de No\u00ebl<\/strong>,avec son coeur coulant irr\u00e9sistible.<\/p><figure class=\"wp-block-image\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1181\" height=\"1825\" src=\"https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2019\/01\/recette-buche-vanille-caramel-silikomart-purbonheur.jpg?fit=663%2C1024\" alt=\"\" class=\"wp-image-3035\" srcset=\"https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2019\/01\/recette-buche-vanille-caramel-silikomart-purbonheur.jpg?w=1181&amp;ssl=1 1181w, https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2019\/01\/recette-buche-vanille-caramel-silikomart-purbonheur.jpg?resize=194%2C300&amp;ssl=1 194w, https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2019\/01\/recette-buche-vanille-caramel-silikomart-purbonheur.jpg?resize=663%2C1024&amp;ssl=1 663w, https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2019\/01\/recette-buche-vanille-caramel-silikomart-purbonheur.jpg?resize=768%2C1187&amp;ssl=1 768w, https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2019\/01\/recette-buche-vanille-caramel-silikomart-purbonheur.jpg?resize=994%2C1536&amp;ssl=1 994w, https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2019\/01\/recette-buche-vanille-caramel-silikomart-purbonheur.jpg?resize=600%2C927&amp;ssl=1 600w\" sizes=\"(max-width: 1181px) 100vw, 1181px\" \/><\/figure><p>Oui je sais, il \u00e9tait temps, c&#8217;est la course depuis No\u00ebl, et avec le s\u00e9jour \u00e0 Disneyland Paris de la semaine derni\u00e8re j&#8217;ai \u00e9t\u00e9 occup\u00e9e et surtout \u00e9puis\u00e9e en rentrant ah ah ah<\/p><p>Mais je vous en parlerai vendredi je pense \ud83d\ude09 <\/p><p>Pour revenir \u00e0 la b\u00fbche de No\u00ebl, cela fait plusieurs ann\u00e9es que j&#8217;ai envie de m&#8217;y essayer mais je n&#8217;osais pas sauter le pas, je pensais que c&#8217;\u00e9tait compliqu\u00e9. <br>En discutant avec ma team chouchou de <a href=\"https:\/\/www.maspatule.com\/\"><strong>Ma Spatule<\/strong><\/a> qui m&#8217;ont convaincu, ils m&#8217;ont parl\u00e9 de plusieurs produits et j&#8217;ai d\u00e9cid\u00e9 d&#8217;acheter (j&#8217;ai bien \u00e9crit ACHETER)  le <a href=\"https:\/\/www.maspatule.com\/moule-a-buche\/9446-kit-moule-buche-starlight-silikomart.html\"><strong>kit pour b\u00fbche Starlight de Silikomart<\/strong><\/a> (il est en solde actuellement).<\/p><p>J&#8217;ai \u00e9galement pris un <a href=\"https:\/\/www.maspatule.com\/moule-a-buche\/4711-moule-mini-buche-ou-insert-silicone-28cm-daudignac.html\"><strong>moule \u00e0 insert<\/strong><\/a>, il est un peu plus grand que mon moule \u00e0 b\u00fbche, il faut le savoir pour penser \u00e0 couper l&#8217;insert avant de le disposer dans le moule pendant le montage final.<\/p><p>Au final on se fait une montagne de certaine chose et puis on respire un grand coup et on se lance&#8230; pour se rendre compte que c&#8217;\u00e9tait pas si compliqu\u00e9! <\/p><p>On s&#8217;est r\u00e9gal\u00e9, on peut l&#8217;a r\u00e9aliser bien en avance pour \u00eatre tranquille, c&#8217;est bien pratique.<\/p><p>Pour la d\u00e9coration de ma b\u00fbche, je l&#8217;a voulait simple, le moule \u00e9tant d\u00e9j\u00e0 bien joli, j&#8217;ai pris un <a href=\"https:\/\/www.maspatule.com\/colorant-alimentaire\/4353-spray-alimentaire-velours-blanc-150ml-scrapcooking.html\"><strong>spray effet velours blanc<\/strong><\/a>.<br>C&#8217;est vraiment canon pour finir la b\u00fbche. Mais on peut tout aussi bien faire fondre du chocolat et couler sur la b\u00fbche.<\/p><p>Pour d&#8217;autres id\u00e9es recettes pour des desserts pour recevoir je vous invite \u00e0 revoir la roux&nbsp;<\/strong><\/li><li>180g de<strong>&nbsp;cr\u00e8me liquide enti\u00e8re<\/strong><\/li><li>3&nbsp;<strong>oeufs<\/strong><\/li><li>1 cuill\u00e8re \u00e0 caf\u00e9 d\u2019<strong>extrait de vanille<\/strong><\/li><li>1 pinc\u00e9e de&nbsp;<strong>sel fin<\/strong><\/li><li>3 feuilles de&nbsp;<strong>g\u00e9latine<\/strong><\/li><li>350g de&nbsp;<strong>cr\u00e8me liquide enti\u00e8re<\/strong><\/li><li><strong>caramel liquide<\/strong> (le mien vient de <a href=\"https:\/\/pur-bonheur.fr\/\"><strong>Pur Bonheur<\/strong><\/a>)<\/li><\/ul><p><em>*Pour le biscuit dacquoise*<\/em><\/p><ul class=\"wp-block-list\"><li>3 <strong>blancs d&#8217;oeufs<\/strong> (il faudra garder absolument 2 jaunes pour la suite)<\/li><li>60g de <strong>sucre<\/strong><\/li><li>70g de <strong>poudre de noisette<\/strong><\/li><li>15g de <strong>Ma\u00efzena<\/strong><\/li><\/ul><p><em>*Pour la bavaroise vanille*<\/em><\/p><ul class=\"wp-block-list\"><li>15cl de <strong>lait<\/strong><\/li><li>1 <strong>gousse de vanille<\/strong><\/li><li>2 <strong>jaunes d&#8217;oeufs<\/strong><\/li><li>60g de <strong>sucre<\/strong><\/li><li>25cl de <strong>cr\u00e8me liquide<\/strong><\/li><li>3 <strong>feuilles de g\u00e9latine<\/strong><\/li><\/ul><figure class=\"wp-block-image is-resized\"><img loading=\"lazy\" decoding=\"async\" 630px\" \/><\/figure><p>Commencer par l&#8217;insert caramel.<br><br>Mettre la g\u00e9latine dans un grand bol d\u2019eau froide pendant 10 \u00e0 15 minutes.<\/p><p>Faire cuire 125g de sucre afin d\u2019obtenir un caramel.<\/p><p>Attention que votre sucre ne br\u00fble pas.<\/p><p>Faire chauffer 180g de cr\u00e8me liquide et ajouter dans votre caramel, hors du feu.<\/p><p>M\u00e9langer pour obtenir une consistance bien homog\u00e8ne.<\/p><p>S\u00e9parer les blancs des jaunes.<\/p><p>Battre les 3 jaunes avec les 25g de sucre restants et l\u2019extrait de vanille, ajouter \u00e0 votre cr\u00e8me caramel en remuant imm\u00e9diatement pour \u00e9viter de cuire les jaunes d\u2019oeufs.<\/p><p>Egoutter les feuilles de g\u00e9latines et incorporer \u00e0 votre m\u00e9lange encore chaud.<\/p><p>Laisser refroidir.<br><\/p><p>Monter les blancs en neige avec une pinc\u00e9e de sel fin.<\/p><p>Monter les 350g de cr\u00e8me liquide enti\u00e8re en chantilly bien ferme.<\/p><p>Incorporer \u00e0 votre caramel les blancs en neige d\u00e9licatement.<\/p><p>Une fois le m\u00e9lange homog\u00e8ne, incorporer la chantilly, en prenant soin de ne pas m\u00e9langer trop fort.<\/p><p>Une fois la pr\u00e9paration parfaitement homog\u00e8ne, disposer dans votre moule \u00e0 insert jusqu&#8217;\u00e0 la moiti\u00e9 puis mettre un peu de caramel liquide au milieu avant de mettre de la mousse caramel de nouveau.<br>Et mettre au cong\u00e9lateur pour minimum 4h. Le mieux \u00e9tant de faire l&#8217;insert la veille du montage. <\/p><p>Vous allez forc\u00e9ment avoir de la mousse caramel en trop, il vous suffira de l&#8217;a disposer dans des ramequins et mettre au frais.<\/p><p>Passer au biscuit dacquoise.<\/p><p>Pr\u00e9chauffer le four \u00e0 170\u00b0.<\/p><p>Battre les blancs en neige avec une pinc\u00e9e de sel fin.<br>Ajouter le sucre.<br>Tamiser la ma\u00efzena par dessus et ajouter la poudre de noisette.<br>M\u00e9langer d\u00e9licatement jusqu&#8217;\u00e0 obtenir un m\u00e9lange bien homog\u00e8ne.<\/p><p>Verser sur une plaque recouverte de papier cuisson.<br>Essayer de ne pas trop \u00e9tendre le m\u00e9lange pour que le biscuit soit bien moelleux et assez \u00e9pais. <br>Utiliser une spatule pour \u00e9taler sur environ 1 cm.<\/p><p>Enfourner pour 20 minutes.<\/p><p>Laisser bien refroidir avant de passer au montage.<\/p><p>Cr\u00e8me bavaroise et montage.<\/p><p>Mettre les feuilles de g\u00e9latine dans de l&#8217;eau froide.<br>Mettre le lait dans une casserole avec la gousse de vanille fendue en 2 (gratter les graines pour les mettre dans le lait).<\/p><p>Faire chauffer et retirer du feu avant \u00e9bullition.<\/p><p>Fouetter les jaunes d&#8217;oeufs avec le sucre.<br>Y verser un peu de lait chaud vanill\u00e9 (penser \u00e0 retirer la gousse de vanille), m\u00e9langer puis reverser l&#8217;ensemble dans la casserole de lait vanill\u00e9.<\/p><p>Faire chauffer jusqu&#8217;\u00e0 obtenir une cr\u00e8me anglaise.<\/p><p>Ajouter la g\u00e9latine hors du feu.<\/p><p>laisser refroidir.<\/p><p>Monter la cr\u00e8me liquide en cr\u00e8me chantilly.<\/p><p>Incorporer au m\u00e9lange d\u00e9licatement.<\/p><p>Passons au m\u00e9lange.<\/p><p>Installer le tapis \u00e9toil\u00e9 dans le moule \u00e0 b\u00fbche ainsi que les c\u00f4t\u00e9s de la b\u00fbche.<br>Disposer un peu de cr\u00e8me bavaroise vanille, jusque 1\/3 du moule.<br>Mettre votre insert caramel.<\/p><p>Appuyer un peu pour faire monter la cr\u00e8me bavaroise sur les c\u00f4t\u00e9s, finir la cr\u00e8me bavaroise avant de d\u00e9poser la couche de dacquoise.<\/p><p>Appuyer l\u00e9g\u00e8rement.<\/p><p>Mettre au frigo et penser \u00e0 d\u00e9congeler 6h avant d\u00e9gustation.<\/p><p>Bon app\u00e9tit! <\/p><pre class=\"wp-block-preformatted\"><strong><a rel=\"noreferrer noopener\" href=\"https:\/\/www.facebook.com\/LaTambouilleDeBouille?ref=hl\" target=\"_blank\">FACEBOOK<\/a>&nbsp;*&nbsp;<a rel=\"noreferrer noopener\" href=\"https:\/\/instagram.com\/bouilledegum\/\" target=\"_blank\">INSTAGRAM<\/a>&nbsp;*&nbsp;<a rel=\"noreferrer noopener\" href=\"https:\/\/twitter.com\/BouilledeGum\" target=\"_blank\">TWITTER<\/a>&nbsp;*&nbsp;<a rel=\"noreferrer noopener\" href=\"http:\/\/www.hellocoton.fr\/mapage\/tambouilledebouille\" target=\"_blank\">HELLOCOTON<\/a>&nbsp;*&nbsp;<a rel=\"noreferrer noopener\" href=\"http:\/\/www.inspilia.fr\/membre\/latambouilledebouille\" target=\"_blank\">INSPILIA<\/a>&nbsp;*&nbsp;<a rel=\"noreferrer noopener\" href=\"https:\/\/www.pinterest.com\/bouilledegum\/\" target=\"_blank\">PINTEREST<\/a> <\/strong><br><br><\/pre><div class=\"wp-block-image\"><figure class=\"alignright\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" width=\"114\" height=\"114\" src=\"https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2018\/08\/logo-wordpress2-e1546845283667.jpg?resize=114%2C114&#038;ssl=1\" alt=\"\" class=\"wp-image-2740\" srcset=\"https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2018\/08\/logo-wordpress2-e1546845283667.jpg?w=114&amp;ssl=1 114w, https:\/\/i0.wp.com\/latambouilledebouille.com\/wp-content\/uploads\/2018\/08\/logo-wordpress2-e1546845283667.jpg?resize=100%2C100&amp;ssl=1 100w\" sizes=\"(max-width: 114px) 100vw, 114px\" \/><\/figure><\/div><p><\/p>","protected":false},"excerpt":{"rendered":"<p>Bonjour bonjour!
