jusqu&#8217;\u00e0 ce qu&#8217;il fonde et caram\u00e9lise.<br \/>\nFaire chauffer la cr\u00e8me liquide dans une petite casserole.<br \/>\nIncorporer en plusieurs fois dans le caramel tout en m\u00e9langeant.<br \/>\nRetirer du feu et incorporer le beurre coup\u00e9s en d\u00e9s.<br \/>\nM\u00e9langer jusqu&#8217;\u00e0 ce que le beurre soit fondu.<br \/>\nConserver dans un bocal data-step=\"\u00c9tape 2\">\n<div class=\"cooked-dir-content\">\n<p>Couper le chocolat blanc en morceaux pour faciliter la fonte du chocolat.<br \/>\nFaire bouillir les 10 cl de cr\u00e8me liquide enti\u00e8re.<br \/>\nAjouter le chocolat et le caramel.<br \/>\nM\u00e9langer jusqu&#8217;\u00e0 obtenir un m\u00e9lange bien homog\u00e8ne.<br \/>\nHors du feu ajouter les 30 cl de cr\u00e8me liquide enti\u00e8re bien froide.<br \/>\nFilmer au contact et laisser 1 nuit au frigo.<br \/>\nAvant utilisation, sortir la ganache et fouetter la au batteur.<\/p>\n<p><img data-recalc-dims=\"1\" data-step=\"\u00c9tape 3\">\n<div class=\"cooked-dir-content\">\n<p>Tamiser ensemble le sucre glace et le cacao non sucr\u00e9.<br \/>\nFouetter le beurre mou jusqu&#8217;\u00e0 obtenir la texture pommade (cr\u00e9meux) et ajouter le sucre et le chocolat.<br \/>\nM\u00e9langer.<br \/>\nAjouter l&#8217;\u0153uf m\u00e9langer de nouveau avant d&#8217;incorporer la farine en plusieurs fois.<br \/>\nFormer une boule, couvrir et mettre minimum 1h au frais.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0.<br \/>\nEtaler la p\u00e2te et d\u00e9couper avec l&#8217;emporte pi\u00e8ce de votre sucre glace.<br \/>\nS\u00e9parer les blancs des jaunes.<br \/>\nFouetter les jaunes d&#8217;oeufs avec le sucre roux et le sucre vanill\u00e9.<br \/>\nMonter les blancs en neige bien ferme.<br \/>\nIncorporer  d\u00e9licatement les blancs en neige dans le m\u00e9lange jaune d&#8217;oeuf et sucres.<\/p>\n<p>Incorporer ensuite en 3 fois le m\u00e9lange tamis\u00e9, m\u00e9langer \u00e0 la maryse.<br \/>\nVerser dans votre moule \u00e0 g\u00e9noise, pr\u00e9alablement graiss\u00e9.<br \/>\nEnfourner pour 10 minutes.<\/p>\n<p>A la sortie, retourner le moule sur un torchon l\u00e9g\u00e8rement humide puis rouler votre g\u00e2teau et laisser refroidir compl\u00e8tement, au frigo pour que se soit plus rapide.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\"
